Preheat oven to 350 degrees F. Lightly grease an 8-inch square baking dish with coconut oil.
In a dry skillet, spread the pecans and toast on medium low heat until fragrant and lightly toasted. Allow to cool.
In a large bowl add the mashed banana, milk, eggs, coconut oil, maple syrup, and vanilla and mix together until smooth. Add in the rolled oats, flaxseed meal, toasted pecans, cinnamon, nutmeg, cloves, and salt; stir until well-combined.
Spread oatmeal into greased baking dish and bake for 20 to 25 minutes or until set and light golden brown on top. Allow to cool in the baking dish for at least 5 minutes before slicing. Serve warm with extra pecans or fresh fruit on top.
